The recipe I’m sharing today is super easy to make, and you can make it in different ways: If you like mild coconut taste then go with the coconut butter option, but if you don’t, just go with the cocoa butter option. For sweetening it you can use either of the following: maple syrup, agave syrup or dates paste. I personally like the date paste option the most but its really a matter of personal taste here. On top of this base you can add optional extras that will give some kick to it, according to what you like or what you have at home at the moment: for chocolate taste add 3 table spoons of cocoa powder, for a Halva taste add a table spoon of raw Tahini. You can also place inside each piece dried cranberries, goji berries, chocolate chips, etc.
To make the fudge into these cute shapes I use silicone molds I ordered via Aliexpress, it is a cheap option I’d recommend for this fudge as well as for chocolates and other little sweets.
The Dishometer Rating:
- ½ cup cocoa butter/coconut butter
- ½ cup almond butter
- ¼ cup plus 3 table spoons sweetened of choice (maple syrup/agave syrup/date syrup)
- 1 tea spoon vanilla extract
- pinch of salt
- Optional: dried cranberries, goji berries, chocolate chips
- Melt the cocoa butter/coconut butter (1/2 cup) in a Bain-marie (a small pot heated over a bigger pot).
- When it melts mix it thoroughly with the almond butter (1/2 cup), the chosen sweetener (1/4 cup plus 3 table spoons), vanilla extract (1 tea spoon) and a pinch of salt.
- Pour into small baking molds and place in the freezer to harden.
- Store in the freezer and grab one out when in the mood for a sweet snack!
